First Coffee Club Cooking Demonstration - Recipes
Our first Coffee Club Cooking Demonstration on the 10th of September was a huge success! Below are the recipes odf the dishes prepared by Sean and enjoyed by his audience on the night. Our next Cooking Demo, focussing on the cuisine of Northern India with Sean as your expert guide takes place on Thursday 24 September from 18h00.
Recipes from Coffee Club – Cooking Demonstration
Thai-Style Smoked Trout Salad
Smoked trout fillets
30ml Thai pesto
30ml Nam Pla
2 limes – juice and zest only
150ml Mayo
50g mixed lettuce
Salt and pepper to taste
Grill trout and slice. Combine with lettuce and dressing and serve immediately with fresh bread
Chicken in Sticky Sweet Marinade
30ml Soy Sauce
10ml Rice Vinegar
100ml Honey
5ml Chilli Pesto
20ml Tomato Paste
120ml Brown Sugar
5cm grated ginger
4 cloves of grated garlic
1 orange – juice and zest only
1 lemon – juice and zest only
Combine all ingredients over a high heat and boil until the sugar dissolves. Cool and serve over chicken or pork, or baste meat with marinade while cooking.
Spicy Lamb or Game Marinade
300ml natural yoghurt
2 Tablespoons grated ginger
2 Tablespoons paprika
1 chilli diced
2 cloves garlic, grated
1 Tablespoon course pepper
1 teaspoon salt
2 lemons – juice and zest only
Combine all ingredients in their raw state. Add meat of your choice and marinade for 12 hours. Grill or fry meat with extra marinade as basting sauce
Kebab Marinade
2 cloves garlic, grated
60ml soy sauce
60 ml oil
15ml peanut butter
4 spring onions, diced finely
5 ml sesame seeds
1 chilli, diced
Combine all ingredients together in their raw state. Add meat of your choice and marinade for 4 hours. Grill or fry meal with extra marinade as basting sauce.
Roast Butternut Salad
500g butternut – cubed
200g bacon
1 teaspoon cumin
2 teaspoons ground coriander
2 cloves garlic, crushed
2 tablespoons sweet chilli sauce
1 tablespoon balsamic vinegar
1 onion, finely diced
100g cashew nuts
In a roasting pan, combine the butternut, bacon, cumin, coriander and garlic with a drizzle of olive oil and roast in a hot oven until soft and the butternut slightly browned, but not burnt. Allow to cool, and then combine with the rest of the ingredients in a large bowl.
Cucumber Salad
200ml rice wine vinegar
1 tablespoon sugar
1 tablespoon sesame oil
1 chilli, diced
1 large English cucumber, diced
Combine and allow to chill for 1 hour. Serve cold.

Michael Tellinger an expert on these ruins having explored over a thousand of them. He is the author of a fascinating book called Adam’s Calendar, which exposes a Stonehenge-like calendar in this province. Tellinger is currently working on the second book which will give much more information about the thousands of stone ruins in the area.

A 75,000 year-old stone calendar - In the cradle of humankind
A new discovery of an ancient circular monolithic stone calendar site in Mpumalanga has proven to be at least 75,000 years old, pre-dating any other structure found to date. Southern Africa holds some of the deepest mysteries in all of human history. What we are told is that at around 60,000 years ago the early humans migrated from Africa and populated the rest of the world.
Who were these first humans? What did they do? And where did they disappear to?
It estimated that there are over 100 000 ancient stone ruins scattered throughout the mountains of southern Africa. Artefacts that have been recovered from these ruins show a long and extended period of settlement that spans to over 200,000 years. The most spectacular examples of these ancient ruins are RIGHT HERE within walking distance. Modern historians have been speculating about the origins of these ruins, often calling them ‘cattle kraal of little historic importance’. The truth of the matter is that closer scientific inspection shows that we actually know very little about these spectacular ancient ruins. It is a great tragedy that thousands have already been destroyed through sheer ignorance but forestry and farmers have now started to protect these ruin. Adam’s Calendar is the flagship among these ruins because we can date this monolithic calendar with relative certainty to at least 75,000 years of age based on a number of scientific evaluations. Adam’s Calendar also presents the first tangible evidence of consciousness among the earliest humans in the ‘Cradle of humankind’. The site is built along the same longitudinal line as Great Zimbabwe and the Great Pyramid. It is also aligned with the rise of Orion’s belt some 75,000 years ago.

The Stone Ruin Museum – MaKomati Foundation
This is a museum with a real difference. Michael Tellinger has put together a staggering collection of items in a small private museum that tells the hidden history of humankind. See a breathtaking collection of aerial photographs of the hidden ancient stone ruins of South Africa, the oldest man-made structure on earth; the 75,000 year-old Stonehenge-type structure called Adam’s Calendar; pottery from the mysterious Lydenburg Heads civilisation from around 300 AD; stone tools that span 1 million years; and the mysterious “wonder stone” – a spherical stone formed billions of years ago that slowly turns on its own axis.
STONE ORIGINS TOUR INFORMATION
1. HALF DAY STONE RUINS TOUR
A guided visit to several ancient ruins in the near vicinity of Waterval Boven. These mysterious ruins consist of dwellings, forts, temples, roads, irrigation systems and agricultural terraces. The tour will include close up views of ancient settlements, monoliths, roads and various artefacts to mention a few of the highlights.
As the guest one will get the chance to walk within the stone structures with a specialist guide.
The tour starts at Stone Circle Bistro with a short tour of the museum followed by a short guided transfer to the first ruin. Thereafter one will proceed to investigate several ruins and noteworthy sites.
2. AFTERNOON PANORAMIC STONE SETTLEMENT TOUR
A guided drive along the edge of the valley observing several ancient settlements, inter-leading roads and terraced mountain sides.
As a guest one will get the chance to experience panoramic views of the area showing the immensity of the settlement from the comfort of a luxury 4x4 vehicle. Short stops will be made to point out several noteworthy sites.
The tour starts at the Stone Circle Bistro with a short tour of the museum followed by a guided drive through the area. It is an ideal tour for the client who has already conducted the Half Day Stone Ruin tour as it reveals part of the magnitude of the settlements.
3. FULL DAY STONE RUINS TOUR
This tour is a combination of the previous two tours with a lunch break at the Stone Circle Bistro.
4. ADAM’S CALENDAR
A guided walk between ancient carved monoliths and dating back to the dawn of Homo sapiens some 250 000 tears ago.
As a guest to this area one will have the opportunity to view sites such as the first sphinx on earth, carved male and female monoliths, sacred ritual paths, as well as the highlight, Adam’s Calendar. The carved monoliths at the calendar site show the significance of alignment to the rising sun in the east, Orion’s Belt constellation, equinoxes and solstices as well as many more mind blowing facts.
The tour starts at the quaint town of Kaapsehoop where you will join your specialised guide. Transferring to the site by means of a 4 x 4 vehicle one spends approximately 4 hours rambling through the ancient sacred site.
Due to the sensitive nature of the site a maximum of 20 persons are permitted to visit the site per day so advance booking is essential.
5. ADAM’S CALENDAR AND ANCIENT STONE RUINS FULL DAY TOUR
A full day is spent touring the two ancient discoveries led by your specialist guide.
The tour begins at Adam’s Calendar in the morning followed by lunch (to own account) at the Stone Circle Bistro in Waterval Boven. After a guided tour to the museum the afternoon is spent touring several ancient stone ruins in the vicinity.
Once again advance booking is essential.
6. HALF DAY HIKE AND GUIDED TOUR OF THE RUINS
Approximately 4 hours are spent walking through the spectacular landscape observing various ancient stone ruins accompanied by your specialist guide. The walk undertaken at a relaxed pace and covers a distance of about 3 km. Please note although the walk is at a relaxed pace one must be of an average fitness.
The tour begins at Stone Circle Bistro in Waterval Boven with a short museum tour followed by a transfer to the site.
7. HELICOPTER TOURS OF THE ANCIENT SITES
Helicopter tours of the ancient sites are the ultimate guided tour, showing one the immensity of the ancient settlements as well as incorporating guided tours to various sites.
These tours will be tailor made to suite the requirements of the guest and must be booked in advance.
